The Countdown to Thanksgiving Has Begun

This is our second installment of yummy Thanksgiving sides that have been known to steal the show at the holiday dinner table. First up is my secret recipe for perfect stuffing. It uses boxed Mrs. Cubbison's stuffing mix and throws in more sauteed veggies than the original recipe includes. I can't take credit for the update - it's been in our family for about as long as Mrs. Cubbison has since 1948.

Next, we have another vegan dish, butternut squash casserole, that all guests will enjoy. Of course, we all know and love the green bean casserole using Campbell's Soup. Ours gets an update using fresh ingredients but does not skimp on the French's fried onions as the crunchy topping.

we start with the basic recipe and add sauteed mushrooms, white corn, green olives and water chestnuts. The key ingredient is using a little apple juice with the chicken stock when mixing.

Make-Ahead Butternut Squash Casserole by Oh She Glows is a vegan delight but can easily be adapted by substituting the nutritional yeast for parmesan cheese.

The Modern Proper updates the Green Bean Casserole we all know and love by using fresh ingredients but saves the French’s fried onions that are essential as the cruncy topping.


We’ve saved the best for last - dessert! Ever since I tried Birmingham’s Dolester Miles Sweet Potato Pie, I have not gone back to traditional pumpkin pie at the end of the Thanksgiving feast. Miles is a James Beard Foundation Award winner and was named America’s Best Pastry Chef.

There are so many nuances to this pie, including a texture that makes it stand up, and the flavors are not the same as pumpkin pie. You can taste orange and ginger, and the bourbon Chantilly cream on top sets this pie apart and is why I will never go back to pumpkin pie. I hope you agree.
