Easy and Delicious Spring One-Dish Dinner Ideas


Welcome to fresh, healthy, and comforting dinners for spring

I’m not sure if you are experiencing the crazy different weather changes we have had since spring began a week ago. One day the temps get into the 90s, and all we can think about is salads, and then there is a deluge of rain, and we’re craving one-dish comfort casseroles. But, regardless of what mother nature throws at us, I’m sure you’ll find something to love in one or two of these dinners. I’m still teaching full time, so these recipes are easy to make and get on the table!

 

Chicken Broccoli Casserole

When I look for comfort food, I think of Trisha Yearwood. This dish can be made ahead and baked when you’re ready to eat.

This sheet pan meal roasts sweet sausage, shallots, and fingerling potatoes and then is tossed with arugula. I could eat this recipe by The Dizzy Cook every week.

Damndelicious is one of my go-to favorite blogs to find recipes that are bursting with flavor. The recipes usually have garlic and butter and this one-sheet salmon recipe is no exception.


I am usually only cooking for two, so I’ll make the full recipe and freeze the leftovers or have them for lunch during the week.

Beyond the Chicken Coop makes their version with freshly roasted poblano chilis - yum! You can always use canned if you're crunched for time.
