Muffin Madness - Quick, Easy Recipes to Make Now and Enjoy Later

A muffin has to be two things: moist and delicious

Muffins are one of those foods that are perfect for breakfast with fruit and coffee or savory to be a substantial side for soup, or decadent enough to crack open for dessert. Regardless of the type of muffin I’m making, it has to be easy. Following are my go-to muffins recipes that can be made in bulk for freezing, adapted for gluten-free, or good enough to share with neighbors or friends.

Desserts are generally not in a muffin format, but they can be. This Carrot Muffin with Walnuts and Cream Cheese Spread by The Spruce Eats is a perfect muffin to have on a chilly fall evening. The muffins served warm will cause the cream cheese to soften, and every mouthful will be a treat. They are made with healthy ingredients and can be frozen to enjoy over and over again.
