Miss Verba’s Pimiento Cheese is a Crowd-Pleaser

Miss Verba's Pimiento Cheese is one appetizer that friend's request I bring to a party. Since the Super Bowl is in the South this year, I thought Miss Verba's Pimiento Cheese would be the perfect appetizer to serve. It comes from Frank Stitt, author, chef, and restauranteur in Birmingham, Mississippi. His cookbook, Southern Table, features this recipe, and I'm happy I found it. The key is to roast the red peppers, do not use store bought ones in a jar if you can, and always grate your sharp cheddar cheese from a block - it makes a difference.

This recipe is quite easy to make and has a pretty long shelf life. Traditionally, it is served with saltines and celery sticks, but adding other crudites like rainbow carrots or sugar snap peas would make your presentation even prettier.

Miss Verba’s Pimiento Cheese

Yield: 2 cups

Recipe

  • Ingredients

    • 1 pound sharp yellow cheddar

    • 1/4 pound cream cheese, softened

    • 1 teaspoon freshly ground white pepper

    • 3 large red bell peppers, roasted, peeled, seeded, and chopped

    • 1/2 cup Best Foods mayonnaise

    • 1 teaspoon sugar

    • Splash of hot sauce, such as Tabasco or Cholulu

    • 1/8 teaspoon cayenne pepper (optional)

    Instructions

    1. Grind the cheddar in a food processor fitted with the grating disk, or grate it on the small-holed side of a hand grater.

    2. Transfer the grated cheese to a bowl, add the cream cheese, white pepper, bell peppers, mayonnaise, sugar, hot sauce, and cayenne, if using, and blend all together thoroughly.

    3. Refrigerate and serve chilled.

Serve with saltines and celery sticks or use as a spread on a grilled cheese sandwich - I add crisp bacon. Enjoy!
